Spinach Soup

Second week, 2nd treatment: Spinach Soup


Ingredient:
  • 4 Tbs Vegetable oil
  • 2 clove garlic
  • 1 onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 medium sweet potato (Kumara, peeled & cubed)
  • 2 cups vegetable stock/broth
  • 200g bag fresh spinach, washed and roughly chopped
Steps:
  1. Very easy, just like how I've made the Healthy Mushroom Soup.
  2. Heat oil, fry onion, garlic, celery & Kumara for 5 minutes.
  3. Add vegetable stock
  4. Bring to boil, cover & simmer for approx 10 minutes
  5. Stir in spinach, cover and simmer for another 10 minutes
  6. Use hand held blender in the saucepan and blitz until smooth
  7. Season with salt & pepper and a pinch of Cayenne Pepper
  8. Serve while its hot and this time I drizzle with Udo's 3,6,9 Oil Blend
I am feeling healthy already!!
