Healthy Mushroom Soup

So, after the treatment, I was advised to go on a soup diet for twenty four hours (24 Hrs), and reduce heavy meat consumption for 3 days.

I made Healthy Mushroom Soup. (no butter, no flour, no milk)

Ingredients:
  • approx 300-400g mushrooms (sliced thinly)
  • 4 Tbs vegetable oil
  • 1 large onion, peeled and chopped
  • 1 L vegetable stock
  • 1 bay leave
  • 1/2 stalk of celery
  • 1 small sweet potato (kumara)
  • Himalayan pink salt & pepper
  • 1 pinch Cayenne Pepper
Steps:
  1. Clean mushrooms
  2. Heat oil in large saucepan
  3. Add in chopped onions, garlic. Fry for few minutes until softened
  4. Turn up heat & add mushrooms and cook for another 5 minutes, stirring constantly
  5. Add in kumara, celery, bay leave and add in vegetable stock
  6. Boil for about 10 minutes
  7. Remove bay leave
  8. Use hand held blender in the saucepan and blitz until smooth
  9. Season with salt & pepper and a pinch or two of Cayenne Pepper to increase metabolism and to add some spicy taste.
  10. Serve while its hot and drizzle with Extra Virgin Olive Oil

Hot soup....best during the cold Winter Season.
