Ingredient:
- 4 Tbs Vegetable oil
- 2 clove garlic
- 1 onion, finely chopped
- 1 stalk celery, finely chopped
- 1 medium sweet potato (Kumara, peeled & cubed)
- 2 cups vegetable stock/broth
- 200g bag fresh spinach, washed and roughly chopped
- Very easy, just like how I've made the Healthy Mushroom Soup.
- Heat oil, fry onion, garlic, celery & Kumara for 5 minutes.
- Add vegetable stock
- Bring to boil, cover & simmer for approx 10 minutes
- Stir in spinach, cover and simmer for another 10 minutes
- Use hand held blender in the saucepan and blitz until smooth
- Season with salt & pepper and a pinch of Cayenne Pepper
- Serve while its hot and this time I drizzle with Udo's 3,6,9 Oil Blend
